Chocolate chips cookies

Ingredients:

Almond  or coconut flour 1 ½ cup
Eggs 1 large or 2 small
Chocolate chips                 | or dried berries ¾ cup (100 g- 1 bar)
Xylitol or coconut sugar | or stevia + shredded coconut ¼ cup
Butter or coconut oil (softened) | or applesause ¼ cup
Vanilla 1 tsp
Sea salt ¼ tsp
Baking soda ¼ tsp

 

  • Preheat oven to 350 – 375
  • Line cookie sheet with parchment paper
  • Mix all in one bowl except chocolate chips. Add more oil/sause if too dry.
  • Add chocolate chips
  • Shape cookies
  • Bake for 10-15 mins – should be just a little golden brown on the bottom
  • Cool for 10 mins

Sugar-free almond chocolates

Sugar-free almond chocolates

Ingredients:

Cocoa Butter 7 TBS
Cocoa Powder 7 TBS
Stevia 7 drops
Almond slivers to taste
  • Melt cocoa butter in double boiler
  • Add cocoa powder and sweetener
  • Mix well and pour in mini muffin cups over almond
  • Put in fridge until hardened
  • Can be stored at room temperature
