Fruit Sugars – Date Yums

Ingredients:

Almond or any other nut/seed butter 1/3 cup
Almond flour 1 cup
Cocoa butter ¼ cup
Dates 1/3 cup
Dried blackcurrants, cranberries, blueberries 2/3 cup all
Mesquick powder, cocoa, carob, xylitol, coconut flakes for coating/rolling
Chocolate chips, nibs, coconut 1 TBSP
Vanilla 1/3 bean

 

  • Soak dated and rinse small dried berries
  • Melt cocoa butter in hot water bain-marie
  • In food processor combine melted butter with soaked dates until smooth
  • Add almond flour and almond butter and vanilla
  • Move resulting dough in a bowl, add berries, and/or chips if using. Mixture should hold together and be stiff. Roll into bite size balls and then roll in cocoa. Keep in fridge.

 

 

Date Yums – Baklava

Ingredients:

Dates 1/2 cup
Walnuts (soaked) 1.5 cup
Coconut oil 2 TBSP
Honey 1 TBSP
Coconut flour 2 TBSP
Shredded coconut flakes for coating/rolling
cardamom 1 TBSP
Vanilla 1/3 bean or 1 tsp extract

 

  • Soak walnuts
  • In food processor combine dates with soaked walnuts until smooth.
  • Add oil, flour, cardamom, honey and vanilla and continue mixing.
  • Move resulting dough in a bowl. Mixture should hold together and be stiff.
  • Roll into bite size balls and then coat with coconut flakes. Keep in fridge.
  • Ingredients can vary depending on what you currently have available. If resulting consistency is too soft, date yums can be put in dehydrator until desired firmness is reached. I noticed that dough can be a bit too soft to hold the shape in variations where no oil or butter was used.

 

Date Yums – Blueberries

Ingredients:

Dates 1/2 cup
Frozen blueberries (thawed) 1/2 cup
Peanut butter or other nut butter 3 TBSP
Cocoa and/or carob powder 3 TBSP
Coconut flour 2 TBSP
Coconut oil 1 TBSP
Optional – Sweetener (honey, xylitol, stevia, vanilla) 1 tsp
Shredded coconut flakes for coating/rolling
  • In a food processor combine dates with blueberries until smooth.
  • Add all other ingredients except for flakes and continue mixing.
  • Cover work surface with parchment paper and sprinkle it with coconut flakes.
  • Move resulting dough on a flat surface. Mixture should hold together.
  • Roll dough into a cylinder using parchment paper and then cut it into bite sized pieces.
  • Coat with coconut flakes. Keep in fridge.

 

Kids Approved Granola Bars

Ingredients:

Rolled Oats 1 cup
Almonds 1/2 cup
Honey 1/4 cup
Coconut oil 1 TBSP
  • Melt coconut oil over low heat, add honey stirring until smooth
  • Remove from heat and add oats and nuts
  • Cover baking dish with parchment paper
  • Pour mixture into a baking dish
  • Cover with new layer of parchment paper and firmly press down
  • Bake at 325 F for 10 mins, cool and cut
